When it comes to not eating wheat one of the things I struggle with the most is sweets. Whenever I want something sweet I usually want chocolate, but not just a piece of chocolate. I want a chocolate cupcake, a milkshake, or a fudge brownie.
The other days Sarah and I were talking about the kinds of sweets and candy we like. She prefers gummy type candies and I could never have another gummy in my life and be fine. I know sweets aren't good and I should try to avoid them but thats unrealistic.
So in an effort to fulfill my sweets craving while avoiding wheat I made the brownies from the Wheat Belly cookbook.
The recipe calls for dark chocolate and expresso for a stronger flavor. I used mild chocolate and coffee (because its what I had) hoping to have a slightly sweeter brownie.
This was my first attempt at wheat free baking and I was pleasantly surprised. They had the same texture as a "normal" brownie, which is important to me. I don't like some foods solely because I don't like their texture.
Sarah and I decided because they aren't the sweetest they would be best served topped with vanilla ice cream.
My assistant chef was tuckered out after all the baking.
